Picked late to ensure maximum flavour, the grapes were in perfect condition on arrival at the winery where they were de-stemmed to open-top fermenters and allowed to rest for two days. The must was then inoculated for primary fermentation and hand plunged every 3 hours. The wine was pressed to stainless steel tanks and allowed to go through malolactic fermentation.
